Chili Lime Caesar Dressing

Chili powder and lime juice crank up the flavor on this easy yogurt-based take on a creamy Caesar dressing.

Ingredients

  • ½ cup plain Greek yogurt any % you like
  • cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced ½ to 1 teaspoon depending on size
  • 1.5 teaspoons anchovy paste substitute 3 anchovy filets
  • ¼ teaspoon chili powder
  • juice of one lime about 2 tablespoons
  • 1.5 tablespoons olive oil
  • 1.5 tablespoons milk
  • teaspoon salt
  • cracked black pepper to taste

Instructions

  • Add all ingredients, except for the milk, to a bowl and stir to combine.
  • Stir in the milk a bit at a time until you reach your perfect drizzly dressing consistency.

Notes

Given the saltiness of the anchovy paste and Parmesan, ⅛ of salt was plenty for me. Feel free to add a bit more to taste if needed.
